This recipe combines Australia’s two favourite breakfast items: a fresh Cheesymite Scroll and avocado toast with egg. This breakfast is the perfect way to start the morning, fuelling you for the day ahead. All you need to do is poach your eggs, toast the scroll and add your avo. Your avocado breakfast game will never be the same! Play with a range of different toppings to make a new recipe every breakfast time.

1 Bakers Delight Mini Cheesymite Scroll
Vegemite
1/2 a large avocado, sliced
2 eggs, poached
Feta
Fresh herbs, finely sliced
Salt & pepper

Method

    1. Step 1

      To make poached eggs, add some water into a saucepan (fill it a few cm from the top) with a dash of vinegar, bring to the boil and then gently place in the egg. Let the egg simmer for 3 minutes, then scoop out and place on some paper towel to get off any excess water.

    2. Step 2

      Slice the Mini Cheesymite Scroll in half and toast.

    3. Step 3

      Once the Mini Cheesymite Scroll is toasted, add on Vegemite, avocado, poached eggs, feta, herbs, salt & pepper. Enjoy!
