The Ultimate Egg, Bacon and Cheese Hot Cross Buns

Introduction

Our Fruitless Hot Cross Buns make the perfect blank canvas for this delicious egg, bacon and cheese breakfast recipe!

Ingredients

Method

Cut the hot cross bun loaf in half lengthways. Heat the oven to 180°C. Place the bottom half of the buns into a baking dish (23 x 19 x 6 cm)

Preheat oven to 200 °C. Line a rimmed baking tray with baking paper. Cut bacon into approximately 3cm long pieces. Arrange bacon onto baking tray in a single layer. Cover with a sheet of baking paper then place second baking tray on top and press down lightly

Bake for approximately 15 minutes or until bacon is nearly cooked through*

*Temperatures may vary according to oven

Remove top baking tray and baking paper. Cook for a further few minutes until bacon is crispy and golden brown. Reduce oven temperature to 180°C

While the bacon is cooking, add eggs, milk, salt and pepper to a bowl. Mix and combine

Heat a fry-pan to medium-high heat. Add butter and swirl around the pan until melted. Pour in egg mixture. Add chives. Using a spatula, move the egg around the pan until the mixture begins firm but is still slightly runny. Remove from the heat

Place scrambled eggs on to hot cross buns. Top with cheese. Transfer to oven (180°C) for 5-10 minutes or until cheese is melted. Remove from oven

Place bacon strips on top, drizzle barbecue sauce. Place top half of buns on top. Transfer to oven for a further 5 minutes or until buns are slightly

Cut and serve
