½ cup cherry tomatoes
¼ yellow capsicum
½ small Lebanese cucumber
¼ red onion, finely diced
90g tuna tin, drained
2 sprigs parsley
1/8 avocado, cubed
2 tbsp homemade vinaigrette salad dressing

 

Vinaigrette Dressing

½ cup extra virgin olive oil and ½ cup balsamic vinegar
Pepper and chilli flakes (optional)
1 tsp mustard of your choice eg Dijon
½ lemon, squeezed

Method

    1. Step 1

      Prepare the vinaigrette dressing by combining all ingredients in a small jar and shake until combined. Keep sealed in the refrigerator

    2. Step 2

      Chop capsicum, cherry tomatoes, cucumber all to equal, bite-size pieces

    3. Step 3

      Place capsicum, tomatoes, cucumber, onion, avocado and tuna in a bowl and mix to combine

    4. Step 4

      Pour over salad dressing and mix to coat all ingredients. Sprinkle with parsley
