2 slices Bakers Delight Apple & Cinnamon Loaf, toast sliced
1/3 cup (80g) smooth ricotta
1/4 tsp orange rind, grated
1/2 tsp vanilla bean paste
1 tsp icing sugar
1/4 cup (38g) blueberries, extra to garnish
1 tbs butter
1 egg, beaten
2 tbs milk
1/2 tsp cinnamon
1 tbs demerara sugar
Assorted berries, to serve
Maple syrup, to serve
Icing sugar, to serve

Method

    1. Step 1

      Combine ricotta, orange rind, vanilla bean, icing sugar and blueberries in a medium sized bowl. Set aside

    2. Step 2

      Place a medium sized saucepan over a medium heat and melt butter

    3. Step 3

      In the meantime, whisk egg, milk and cinnamon in a bowl. Working one by one, soak the Bakers Delight Apple & Cinnamon Loaf slices in the egg mixture and place in pan. Cook for 2 minutes or until golden

    4. Step 4

      Sprinkle each piece of toast with demerara sugar, turn over & cook for 2 minutes or until golden. Spoon ricotta mixture onto one piece of French toast and sandwich with the other. Reduce heat to low and cook a further minute on each side

    5. Step 5

      Plate with berries, maple syrup and dust with icing sugar. Serve immediately
