2 Bakers Delight Brioche Hamburger Buns, halved
4 rashers middle bacon
1tbsp maple syrup
½ avocado, peeled and sliced
2 tbsp whole egg mayonnaise
4 butter lettuce leaves
1 spring onion, trimmed and thinly sliced
Place a medium size fry pan over medium heat. Once hot add bacon and cook for 3 minutes on each side or until starting to turn golden. Add maple syrup and continue to cook for 2 minutes. Remove bacon and place onto a plate and keep warm.
Meanwhile, toast Brioche Buns on a grill pan over medium heat until charred.
Spread the mayonnaise onto each Brioche roll and top with lettuce, avocado, bacon and sprinkle with spring onion. Season with salt and pepper. Top with Brioche lids to close and serve immediately.
