Eggs & Grilled Tomato on Cape Seed Toast

Bring the café to your kitchen with eggs and grilled tomato on our delicious Cape Seed Loaf.

Ingredients

1 slice Cape Seed Loaf
2 eggs
½ tbsp reduced-fat milk
½ tbsp extra-virgin olive oil
Few Parmesan cheese shavings, 15g
½ medium tomato
Black pepper, chilli flakes or fresh chilli, to taste

Method

    1. Step 1

      In a small bowl, whisk together eggs, milk, cheese and chilli flakes and/or pepper

    2. Step 2

      In a small frying over medium heat, heat oil and rotate to cover entire pan

    3. Step 3

      Once oil is heated, pour in egg mixture and let cook slightly before gently pushing the mixture inwards with a non-stick spatula

    4. Step 4

      Continue to gently fold in edges and rotate cooked egg. Remove folded eggs from the pan when just underdone as the mixture will continue to cook whilst hot

    5. Step 5

      Return the same pan to the heat and place down edges of tomato quarters. Cook on each side until grilled, approximately 2 minutes each side

    6. Step 6

      Serve folded eggs and grilled tomato atop toasted Cape Seed Loaf . Season well with black pepper and additional herbs, such as parsley if you like

  1. Additional Comments

    1. Adding the chilli flakes in the egg mixture allows the flavour to infuse when cooking.
      You can also use infused oils such as chilli oil for a more intense flavour.
