Croque Monsieur Bread Pudding

1 Bakers Delight Pane di Casa Vienna Loaf
1 tbsp unsalted butter, plus extra to grease pan
1 brown onion, finely diced
3 garlic cloves, crushed
1 tbsp thyme leaves, chopped
8 eggs
1 ½ cups of milk
2 tbsp Dijon mustard
1 tbsp salt flakes
2 cups of Gruyere cheese, grated
4 rashes of streaky bacon, cut into 1cm dice

Method

    1. Step 1

      Pre-heat oven to 180°C 

    2. Step 2

      Coat a baking dish with butter and set aside

    3. Step 3

      Place a large frying pan over medium heat and add butter. When it foams, add onion and cook until just softened, about 3 to 4 minutes

    4. Step 4

      Add garlic, season with salt and pepper, and cook until beginning to soften and fragrant, about 1 minute. Remove from heat and stir in thyme

    5. Step 5

      Whisk eggs, milk, mustard and salt in a large bowl until evenly combined

    6. Step 6

      Arrange half of the bread at the bottom of the prepared dish. Sprinkle with 1 cup of the cheese and half of onion mix and bacon. Repeat layering with remaining bread, onion mixture, bacon and cheese. Pour egg mixture over top

    7. Step 7

      Bake for 20 minutes or until cheese is golden on top
