This tasty Croque madame recipe is the perfect way to level up your breakfast in a flash, using a few simple ingredients to transport you across the world! Enjoy the saltiness of the ham with the oozy béchamel sauce and melted cheese, finished off with the pièce de résistance, a little fried egg hat. Who knew breakfast could be this delicious?

Pre-heat oven grill. Melt the butter in a small saucepan over a medium heat. Add flour and cook, stirring with a wooden spoon, for 1-2 minutes until the mixture begins to bubble.

Gradually pour in the milk, while stirring to create a smooth rich béchamel sauce. Bring the saucepan to the boil, then reduce heat to medium while stirring for 4-5 minutes, or until the mixture begins to thicken. Add salt and pepper to taste.

Place one half of the Brioche Hamburger Buns on a tray, and assemble by adding 2 slices of ham to each bun, topping with ½ cup of grated cheese. Place in the oven until cheese begins to melt. Remove tray from oven. Add a generous spoonful of béchamel sauce and top with remaining Brioche Hamburger Bun, before returning to the oven.

Grill until golden brown. Remove from the oven and top each Brioche Hamburger Bun with a fried egg. Serve immediately.
