Looking for a tasty, nutritious sandwich packed with healthy wholegrains to keep your kids going all day long?

This chicken avocado sandwich is great for kids who love textured flavour, while being nutritious and easy to make – perfect for the school lunch box! Made on our popular Cape Seed loaf, containing 11 grains, seeds and beans, its packed full of fibre to keep their gut healthy, with iron, magnesium and zinc, to support strong muscles and a healthy mind.

On a layer of creamy yogurt full of calcium, for strong teeth and bones, the chicken and avocado not only tastes delicious, is a great source of protein, b-vitamins and fats. The celery adds a delicious crunch, and the mixed leaves are packed with vitamins, making this a powerhouse of a sandwich!

4 x slices of Bakers Delight Cape Seed Loaf
1 x chicken breast, poached or roasted and cooled, cut into roughly 1/2cm dice
1 x celery stick, washed and cut into a fine dice.
2 tablespoons of Greek yoghurt
½ x avocado, sliced
A handful of mixed leaves
A pinch of salt and pepper to taste

Method

    1. Step 1

      Dice the Chicken and Celery and mix in a bowl together with Greek yoghurt, salt and pepper

    2. Step 2

      Spread the mix onto two pieces of Cape Seed Loaf, top with sliced avocado, mixed leaves, and finish with the remaining slices of bread
