If you’re looking for the ultimate winter warmer, you can’t beat our roast tomato soup! With all the goodness of tomatoes, it’s a sweet and creamy way to celebrate the wintery weather. To get you all snug, we’ve created a roasted tomato soup recipe to warm up your insides, with some earthy herbs and a kick of chilli. We couldn’t help but make it even better though, so we’ve used our crowd favourite Sourdough Vienna loaf to create the perfect gooey cheesy side.

Tomato Soup

1½ kg Tomatoes
2 red onions chopped into quarters
1 full garlic bulb (top cut off)
1 tsp salt, pepper
1 tbsp olive oil
1 cup vegetable / chicken stock
1 tsp chilli flakes
1 tsp thyme
1 tsp oregano
½ cup cream (leaving some to serve)
salt & black pepper to taste
fresh basil to serve

Sourdough Cheese Toastie

2 slices of Bakers Delight Sourdough Vienna per person
1 cup grated mixed cheese
2 tbsp butter (per toastie)

Method

  1. Tomato Soup

    1. Step 1

      Preheat the oven to 200°C

    2. Step 2

      Cut the tomatoes into wedges & prepare the rest of the vegetables

    3. Step 3

      Place the tomatoes, onion & garlic on a baking tray & coat with olive oil, salt & pepper

    4. Step 4

      Roast in the oven for 30 minutes or until the garlic bulb has browned. Remove from the oven & keep the garlic bulb separate

    5. Step 5

      Pour the veggies into a large pot on the stove on high heat & squeeze the garlic bulbs into the mixture

    6. Step 6

      Add chicken stock, chilli flakes, thyme, oregano & cream to the pot. Bring to a boil for 3 minutes

    7. Step 7

      Remove from the heat & use a stick blender to create the soup

  2. Sourdough Cheese Toastie

    1. Step 1

      To make the grilled cheese sandwiches, butter all sides of the bread

    2. Step 2

      Add ½ cup cheese to half of the slices of bread. Sandwich with the remaining bread

    3. Step 3

      Cook in a non-stick pan, over medium heat until the cheese is melted & the sandwiches are golden brown on both sides

    4. Step 4

      Serve the tomato soup with a swirl of olive oil, cream & fresh basil leaves with the grilled cheese sandwiches. Enjoy!

What does roasting tomatoes do to the flavour?

When you roast tomatoes you amplify the flavour, so what you get is greater depth, a slight smokiness, and a concentration of the tomatoey goodness. They’ll also end up sweeter as the sugars are intensified with the heat of the oven.

Is it better to roast vegetables before making soup? 

While you can just boil vegetables for soups, roasting them first will give you more interesting and intense flavour profiles that you’d otherwise miss. The vegetables will caramelise and come out with a slight smoky flavour, which will take your soupy lunch or dinner to the next level.

Is tomato soup better with milk or water?

If you want a creamy tomato soup, milk as a base will make for a thicker consistency than water. If you want a truly creamy and delicious tomato soup though, using stock as a base and adding cream will give it the ultimate flavour and texture.
