Preheat oven to 180°
For the almond paste, combine the butter, egg, almond meal, granulated sugar, almond extract & vanilla extract in a bowl. Beat together until smooth
Cut the croissants in half lengthwise and brush the inside with simple syrup. Spread the bottom half of the croissants with almond paste and place the other half on top to sandwich together. Brush the top of the croissants with simple syrup and top with more almond paste. Press slivered almonds on top of the almond paste
Bake for 12 to 15 minutes or until golden brown. Sprinkle with icing sugar. Enjoy!
