2 Bakers Delight White Pizza Bases
2 tbsp pesto sauce
120g mixed pizza cheese
2 zucchini
Salt & pepper
1/4 cup pine nuts
2 tbsp olive oil
100g ricotta
50g parmesan
8 fresh basil leaves
2 lemon wedges

Method

    1. Step 1

      Preheat oven to 200°c

    2. Step 2

      Ribbon the zucchini using a vegetable peeler

    3. Step 3

      On a lined baking tray place down the pizza bases and spread with the pesto, followed by the grated cheese, zucchini ribbons, salt, pepper, pine nuts and a drizzle of olive oil

    4. Step 4

      Cook in the oven for 10 minutes, or until the cheese is bubbly and golden

    5. Step 5

      Remove pizza from the oven and top with dollops of ricotta, parmesan, fresh basil leaves and a squeeze of lemon

Does zucchini need to be cooked before pizza?

You don’t need to cook zucchini before you add it to your pizza, just make sure you slice it thinly so that it cooks all the way through. As pizza isn’t in the oven for very long, slicing it into thin ribbons is the best way to ensure your zucchini pizza topping is fully cooked.

What vegetables go well on pizza?
