2 slices Cape Seed Loaf
½ medium red capsicum
½ cup rocket
20g Manchego cheese
1/3 cup grated cheese blend, 25g
1 tbsp jar chipotle sauce
½ tomato, sliced
1 tsp extra-virgin olive oil

Method

    1. Step 1

      Place capsicum slices on an ovenproof baking tray and bake at 180 degrees for 15 minutes until capsicum forms some blisters

    2. Step 2

      On one slice of bread, spread chipotle sauce and top with grated cheese blend. On top of the cheese, place roasted capsicum, sliced tomato and rocket. Top with Manchego cheese last

    3. Step 3

      Place into the sandwich press and bake until browned and cheese is melted
