200g chicken breast, poached
½ green capsicum
½ brown onion, diced
½ tbsp extra-virgin olive oil
1 x 400g tin black beans
1 tbsp Mexican seasoning
1 cup reduced-salt vegetable or chicken stock
2 tbsp tomato paste
½ cucumber
½ tomato
Coriander and lime wedges, to serve

Method

    1. Step 1

      Poach chicken breast until cooked through. Place in a bowl to cool then using two forks, shred chicken

    2. Step 2

      In a large pan over medium heat, add oil and fry the onion until fragrant. Add in capsicum and black beans and stir for 2-3 minutes

    3. Step 3

      Add in tomato paste and stir to coat ingredients. Add in Mexican seasoning, chicken and stock

    4. Step 4

      Reduce heat and allow to simmer down until the liquid has reduced slightly

    5. Step 5

      Finely dice cucumber and tomato to create a salsa

    6. Step 6

      Serve chicken and bean mix with salsa on top, coriander and a squeeze of lime juice
