Lamb Skewers with Greek Salad

Skewer

400g diced lamb
2 tbsp extra-virgin olive oil
½ tbsp mixed herbs
garlic clove, diced
Few sprigs of parsley, chopped
Juice of ½ lemon
2 large white potatoes, sliced into discs
2 tbsp homemade tzatziki

 

Salad

2 large Roma tomatoes
1 large Lebanese cucumber
¼ cup kalamata olives
½ red onion
1 tbsp extra-virgin olive oil
80g Greek feta, salt reduced

 

Tzatziki Sauce

1 cup unsweetened Greek yoghurt
½ cucumber grated
½ lemon, squeezed
Salt and pepper

Method

    1. Step 1

      Prepare the tzatziki sauce by mixing in a small bowl, yoghurt, cucumber, lemon juice and salt and pepper. Keep refrigerated in an airtight container

    2. Step 2

      In a medium bowl, marinate lamb and potatoes with half the oil, parsley and lemon. Remove potatoes and leave the lamb to marinate for 1 hr

    3. Step 3

      Bake potatoes on a baking tray in a medium oven for 20 minutes

    4. Step 4

      To prepare salad, cut tomatoes into wedges, quarter cucumbers, slice onions and combine in a bowl with remaining oil. Add in olives and cubed feta pieces

    5. Step 5

      Skewer lamb pieces and cook these over medium heat on a BBQ or the stovetop, approx 8 – 10 minutes. Serve with salad, potatoes and tzatziki
