If you like your chicken a little bit spicy, with a whole lot of smokey flavour, you’ll love our harissa chicken recipe! It’s the perfect mid-week dinner recipe to cook up when you want something tasty, as it’s easy to prepare and is ready in just 25 minutes.

The harissa marinade gives the chicken a peppery, tangy, smokiness that goes perfectly on the barbeque. The capsicum and corn are the ideal crunchy accompaniments for this chicken harissa, and the fresh mixed leaves bring it all together for a quick and easy taste sensation. For best results, let the harissa marinade work its magic overnight, but if you’re pressed for time and want it now, give it about an hour.

3 cups mixed leaf lettuce
1 large corn cob, or 2 small corn cobs
1 red capsicum, sliced
200g chicken breast
1 tbsp harissa seasoning
½ tbsp extra virgin olive oil
1 tbsp homemade vinaigrette dressing

Method

    1. Step 1

      Marinate chicken breast by coating in oil and harissa seasoning. Leave covered in the fridge for 1 hr or overnight, if possible

    2. Step 2

      For a delicious, smokey flavour, cook capsicum, corn cob and chicken on the BBQ, rotating evenly for an all-over charring, approx 8 -10 minutes

      Dress lettuce leaves in vinaigrette dressing and assemble plate with all elements

    1. If a BBQ isn’t available, vegetables can be oven-baked in a 180°C oven for 20 minutes and chicken cooked in a medium pan on the stovetop.
