In a large bowl, mix the fresh herbs into the pork mince. Form the pork into 4 even ball-shaped portions. Season with salt
Heat a large frypan over medium-high until hot. Add some olive oil to the pan. Working in batches if necessary to not over-crowd the pan, place the burgers in the pan. With a spatula, immediately smash the burgers down flat. Cook or about 3-4 minutes, or until the outer edges of the patties look a deep golden brown
Flip the patties, and top each with a slice of brie cheese. Continue to cook for 3 minutes longer, until the cheese is beginning to melt and the other side of the patties are golden brown
While your burgers are cooking, cut your rolls in half and toast under the grill for 2-3 minutes. Transfer the burgers to a plate to allow them to rest
When ready to assemble your burgers, place garlic aioli on top & bottom of each burger bun, top the base with a large handful of rocket, add the pork & brie burger. Enjoy!
