Caramelised Onion & Fig Toastie Recipe
Introduction
Some toasties are quick, but this one is worth slowing down for. Onions cooked down into sweet, golden strands that meet fresh figs and layers of creamy brie and mozzarella, all pressed between buttery sourdough. The result is crisp, rich and just a little bit fancy for something made in a frying pan.

Slice the two brown onions thinly

Heat half the butter in a frying pan over medium heat. Add the onions with a small pinch of salt and cook, stirring occasionally, until soft, golden and caramelised. This will take about 20–25 minutes. Set aside

Butter one side of each slice of Vienna sourdough

Place one slice of bread butter-side up and begin layering your fillings in this order: sliced figs, a generous layer of caramelised onions, slices of brie, then the shredded mozzarella

Place the second slice of bread on top with the buttered side facing down. Butter the outside of the sandwich to ensure a nice golden outer!

Cook the toastie over medium heat on the stove for about 3–4 minutes per side, pressing gently with a spatula, until the bread is golden and crisp and the cheese has melted

Remove from the pan, rest for 1 minute, then slice and serve
