Croissant "Carrots" with Herby Lemon Cream Cheese Recipe
Introduction
These flaky Croissants are dressed up as carrots and guaranteed to be a hit with little (and big) bunnies alike. Filled with a creamy mix of lemony cream cheese, sweet grated carrot and fresh herbs, they’re piped for that playful carrot shape, then finished with a sprig of parsley on top. Fun to make, even more fun to eat and perfect for getting the kids excited about something savoury on the Easter table. Cute, clever and guaranteed to disappear quickly!

Method
1
In a bowl, mix together the cream cheese, grated carrot, parsley, dill, salt, pepper, lemon zest and lemon juice until smooth and fully combined
2
Cut each croissant in half. Gently push the soft inside from the centre to the outer sides to create a cavity for piping
3
Spoon the cream cheese mixture into a piping bag (or zip-lock bag with the corner snipped)
4
Pipe generously into each croissant half, filling from end to end
5
Finish with a small sprig of parsley on top of each one to make them look like carrots
6
Serve immediately or chill until ready to plate
