Preheat oven to 180 degrees Celsius

Grease a large baking dish with butter or non-stick spray

Tear the croissants into large chunks and layer into the baking dish, then place the ham slices among the croissants and sprinkle with cheese

To make the egg mixture: whisk the eggs, milk, cream, mustard, thyme, salt and pepper together in a bowl until well combined

Pour the egg mixture evenly over the croissant bake

Sprinkle the top of the bake with bagel seasoning and then place in the oven to bake for 30-40 minutes, or until the croissants are golden and the cheese has melted. If it's browning too quickly, cover the bake with foil

Allow to cool for 5 minutes, then serve
