Preheat your oven to 180°C (160°C fan-forced). Line a baking tray with baking paper

In a small bowl, combine the butter, chives and pepper

Slice each croissant vertically into thick slices, leaving the base intact so the croissant stays in one piece

Place each croissant on a lined baking tray and fill the cuts with the butter and cheese. Use the remaining butter to brush on top

Place in the oven for 10 minutes or until cheese is golden bubbly and brown

Remove from oven and serve while warm and gooey
