Pull the chicken off the bones, keeping some of the juicy skin (not the hard bits) and 1 tsp of stuffing. Shred with an electric mixer or with two forks

Combine the chicken with the spring onions, celery, sour cream, mayo, mustard, parsley, dill, salt, pepper and a squeeze of lemon

Use a circle cookie cutter to create circles in the bread. Lightly butter and place 2 heaped tbsp of chicken mixture in the middle. Top with another lightly buttered slice of bread. Continue using all slices of bread

Use a vegetable peeler to slice the cucumber into ribbons

Assemble the cucumber ribbons onto skewers in a Christmas tree shape and place one into each chicken skewer to secure
