Hot Cross Bun Vanilla Slice Recipe

In a large bowl, whisk together the egg yolks, sugar and cornflour until smooth and well combined

Gently warm the milk in a saucepan until just steaming (do not boil). Slowly pour the warm milk into the egg mixture, whisking constantly until combined and slightly airy

Transfer the mixture back into the saucepan and cook over low heat, stirring continuously to prevent curdling. Gradually add the butter, stirring until melted and fully incorporated. Continue cooking until thick and smooth

Slice the hot cross buns in half horizontally. Reserve the tops to use as a lid later

Place the bottom halves of the buns snugly into a lined baking tray, cut-side up. Pour the warm custard evenly over the buns and gently spread to level

Refrigerate for at least 4-6 hours, or preferably overnight, until the custard is fully set

Once the custard has set, place the reserved top halves of the buns over the custard

Dust generously with icing sugar. Slice into portions and enjoy!
