Our Grilled Caprese Baguette recipe is packed full with tasty fresh ingredients like cherry tomatoes and crunchy, yet soft baguette roll. The best bit? Preheat oven to 200°C. Line a baking tray with baking paper

Place tomato on the lined tray and drizzle with oil. Season. Bake for 15-20 mins or until tomato begins to collapse. Set aside to cool slightly

Meanwhile, process the rocket, parmesan, pine nuts and garlic in a food processor until finely chopped. With the motor running, add the extra oil and lemon juice in a thin, steady stream until well combined. Season

Preheat grill to high. Cut the baguette in half lengthwise on a slight angle, then cut in half crossways. Place bread cut side up on an oven tray. Cook under the grill for 3 mins or until golden and toasted

Spread rocket mixture over bread and top with tomato and burrata. Sprinkle with basil leaves and drizzle with balsamic glaze. Season to serve
