Prawn and Garlic Cob Loaf Recipe

Preheat oven 180 degrees

Combine butter, half the garlic, half the chives and chilli flakes into a small bowl.

In another bowl combine the remaining garlic & chives with the cream cheese & sour cream, salt & pepper. Whip until well combined

Using a sharp knife, remove the top of the cob and scoop out all the soft bread into medium chunks. Place cob & bread chunks on an oven tray; brush with oil. Bake for 20 minutes or until cob is crisp and golden brown. Remove from oven

Meanwhile, add the garlic butter mixture and olive oil to a large frying pan over medium high heat. Cook the prawns in batches for a few minutes on each side until just cooked. Season with salt and freshly ground pepper

Allow the cob to cool slightly, then fill with the garlic cream cheese mixture

Transfer the prawns to the cob as they are cooked. Drizzle with any remaining juices from the pan. Transfer to a serving plate; serve with lemon wedges.
