Preheat oven to 180 degrees Celsius

In a large fry pan on medium heat, cook down the fresh spinach and set aside and allow to cool. Recommend using a paper towel to squeeze out the excess liquid

In a large bowl, combine the ricotta, feta, spinach, 2 tsp of bagel seasoning, salt and pepper

Line a baking tray with paper. Cut the 4 croissants in half lengthways

Onto the base of the croissant spread 1 heaped tsp of the spinach mixture, replace the lid of the croissant, brush the croissants with egg and then sprinkle with bagel seasoning

Place into the oven and bake for 8-12 minutes, until golden brown. Serve immediately
