Sometimes simple is best! Cue our ricotta bruschetta, perfect for lunch, entertaining or just an easy gourmet snack. Best yet? All you’ll need is tomatoes, ricotta, basil and garlic - plus a tasty Sourdough Vienna! This classic combination will quickly become one of your go-to bruschetta recipes.

Drizzle cherry tomatoes with tbsp of olive oil, a pinch of salt and crushed garlic cloves. Place in the oven for 15 at 180°C

Toast your Sourdough slices and top with ricotta, roast tomato and dress with fresh herbs

The key to keeping your bruschetta from going soggy is to assemble it right before serving. By topping the bread right before you serve, it prevents the wet ingredients from soaking into the bread, making it soggy. 

The best bread for bruschetta will be firm enough to hold the toppings, while being soft on the inside. We prefer a Sourdough Vienna for this recipe, but you can also use ciabatta loaf or a french baguette. 

Bruschetta can be served warm or cold. Traditionally, it’s often served warm with the topping served on toasted bread.
