Lamb Skewers with Greek Salad

Method

Prepare the tzatziki sauce by mixing in a small bowl, yoghurt, cucumber, lemon juice and salt and pepper. Keep refrigerated in an airtight container

In a medium bowl, marinate lamb and potatoes with half the oil, parsley and lemon. Remove potatoes and leave the lamb to marinate for 1 hr

Bake potatoes on a baking tray in a medium oven for 20 minutes

To prepare salad, cut tomatoes into wedges, quarter cucumbers, slice onions and combine in a bowl with remaining oil. Add in olives and cubed feta pieces

Skewer lamb pieces and cook these over medium heat on a BBQ or the stovetop, approx 8 - 10 minutes. Serve with salad, potatoes and tzatziki
