Mini Lamb Kofta Pizza

Place a metal tray in the oven and pre-heat to 220°C

Spread the pesto over the pizza bases and top with cheese, lamb koftas and red onion

Carefully place the pizzas onto the hot tray and bake for 6-8 minutes or until edges are golden and cheese has melted

Remove from oven and sprinkle with the mint leaves
