How to Level Up Any Vegetarian Toastie

A great toasted sandwich starts with a few simple habits. Here’s how to take yours from ‘fine’ to ‘the best part of my day’.

Choose the Right Bread

Butter (or Oil) Both Sides, Always

It sounds simple, but it makes all the difference. A thin, even layer of butter or oil on the outside of your bread is what gives you that golden, crisp crust. If you're using a sandwich press, brush it on generously - don't be shy!

Don't Overfill Your Toasted Sandwich

It's tempting to pile everything in, but an overstuffed toastie is hard to flip, hard to cook evenly, and tends to spill out the sides. Aim for a generous but manageable layer; you want every bite to have a bit of everything, not an avalanche of filling in the middle.

Resist the urge to crank the heat. A toastie cooked over medium heat for a few extra minutes per side will have melted, gooey filling and a properly golden crust, rather than burnt bread with a cold centre.

Easy Swaps: Vegan, Spicy or High-Protein Toasties

One of the best things about a vegetarian toastie is how easy it is to customise. Here are a few simple ways to make your toastie work harder for you.

Making it Vegan

Going vegan doesn’t mean missing out on that melty cheese pull. Swap dairy cheese for a good-quality shredded vegan cheese, and use a plant-based butter alternative like Nuttelex for both the filling and the outside of your bread. Nutritional yeast is also a great addition, as it brings a savoury, cheesy depth to sauces and fillings without any dairy at all. 

Turning Up the Heat

If you like things spicy, a little goes a long way. Try adding sliced jalapeños, a smear of harissa or chilli jam underneath your cheese, or a few shakes of chilli flakes into any creamy base to make some of the best toastie fillings. Hot honey is also having a popular moment, so drizzle it over halloumi or caramelised onion for a sweet-and-spicy hit.

Boosting the Protein

For a more filling, high protein toastie, look to ingredients like halloumi, eggs, legumes (think mashed chickpeas or lentils), or a generous handful of nuts and seeds folded into your filling. Cheese itself is also a solid protein source, so don’t be afraid to layer it on.
