Mini Quiches Chia Crust

Our Chia Omega-3 Wholemeal loaf works perfectly as a delicious crust for this delightful tart. Serve with a big fresh green salad and enjoy.

8 slices of Bakers Delight Chia Omega-3 Wholemeal Block Loaf, sliced for sandwiches
3 tbsp canola oil
8 eggs
1/2 cup (125ml) reduced fat milk
Pepper (to taste)
1/2 cup diced reduced salt ham
1/2 cup finely diced onion
1/2 cup finely chopped spinach
1 tbsp finely chopped parsley
1 1/2 cup 50% reduced fat grated cheese
(reserve 1/2 cup for topping)

Method

    1. Step 1

      Preheat oven to 180C/350F. Prepare ramekins by oiling with 1 tbsp. canola oil. Trim Bakers Delight Chia Omega-3 Wholemeal Loaf crust and cut bread to fit the bottom and sides of the baking dish.

    2. Step 2

      Beat salt and pepper, eggs and milk together. Add the rest of the ingredients. Mix to combine. Divide mixture between baking dishes and top with remaining cheese.

    3. Step 3

      Brush canola oil on the bread above the egg mixture. Place ramekins on a baking tray and bake for 30-35 minutes or until the centre is set.

    4. Step 4

      You may need to cover loosely with baking paper to prevent the bread from browning too quickly. Remove from oven and serve immediately.

    5. Step 5

      Serve with a large garden salad.
