Vanilla Bean and Cinnamon Mascarpone with Mixed Berries

4 slices Bakers Delight Sourdough Loaf
2 cup mixed berries, raspberries, blueberries, strawberries, blackberries
1 tbsp caster sugar
3/4 cup mascarpone
¼ cup greek yoghurt
2 tsp lemon zest
1 vanilla bean – seeds scraped
½ tsp cinnamon


    1. Step 1

      Place the mixed berries and caster sugar in a medium size bowl and mix well to combine, set aside for five minutes. Berries will marinate and create their own juices with the sugar.

    2. Step 2

      Meanwhile, in a small bowl place mascarpone, yoghurt, vanilla, cinnamon and lemon zest and stir well to combine.

    3. Step 3

      Toast slices of Sourdough until lightly golden. Top with mascarpone mixture and berries and serve immediately.
