Cut the Cheesymite Scrolls in half horizontally. Heat a frying pan over medium heat and add the scrolls cut side down to toast

Once scrolls are toasted, remove from pan and add in the bacon. Cook for 2-3 minutes until crispy and golden. Place bacon on some paper towel to absorb the excess fat

Crack the 2 eggs into the same pan and cook until the egg white has set, but the yolk is still runny (about 3 minutes)

Layer the scrolls with the mayo, lettuce, tomato, avocado, bacon and eggs. Enjoy!
