Cook brown rice according to instructions and set aside to cool. Preferably use cooked and cooled rice in this dish

In a small bowl, whisk together eggs and cook omelette-style in a small pan with heated butter. Set aside and cut into small bite sized pieces

In a large pan, heat oil and sauté onions, ginger, carrot and broccoli on high heat for 2-3 minutes. Add rice and egg to the pan and mix to combine

Mix together oyster sauce, soy sauce and chilli flakes in a small bowl and then pour over the rice mixture

Keeping the pan over high heat, add in bok choy. Turn ingredients over gently until bok choy has wilted and vegetables are tender

Serve with fresh coriander and a squeeze of lemon juice

If the fried rice is made without meat, it’s suitable for vegetarians. As fried rice commonly has ham, prawns, and even pork added to it, it’s best to check the recipe and omit these ingredients if you’re going meatless.
