Bring a small saucepan of water to a gentle simmer. Crack eggs into the water and poach for 3 - 4 minutes, then remove and set aside

In a bowl, spoon the Greek yoghurt

Place the poached eggs on top of the yoghurt

Dust paprika, dukkah and salt & pepper over the bowl

Sprinkle with fresh herbs and serve with toasted baguette slices on the side
