Preheat oven to 180°C. Lightly grease a baking dish

Slice each croissant open lengthways, being careful not to cut all the way through

Fill each croissant with zucchini ribbons, ham and grated cheese, then place snugly into the baking dish

In a bowl, whisk together the eggs and self-raising flour until mostly smooth. Stir through the grated zucchini, chopped chives, salt and cracked pepper

Pour the zucchini egg mixture around and slightly over the croissants. Lightly spray the tops with olive oil

Bake for 30–35 minutes or until golden on top and the zucchini egg mixture is fully set

Serve warm while the croissants are still crispy on top and soft underneath
