Vegan Mac & Cheesey Toastie recipe

Vegan-easy Mac & Cheesy Toastie

Grilled cheese will never be the same.This OTT toastie is not only oozing with mac & cheese, but is also VEGAN!



4 slices Bakers Delight Continental Pasta Dura
1/2 tsp nutmeg
1/4 tsp paprika
1 tsp nutritional yeast
1 cup elbow pasta
2 tbsp Nuttelex or another vegan butter alternative
1 cup soy/almond milk
1/2 cup shredded vegan cheese
1/4 cup parsley leaves
Salt & pepper


    1. Step 1

      Add salt water in saucepan and bring to the boil before adding pasta and cooking as per packet instructions

    2. Step 2

      In a seperate saucepan, add Nuttelex. Once melted add 2 tbsp of plain flour and mix well on heat for 2 minutes. Slowly add vegan milk while continuing to stir to create white sauce

    3. Step 3

      Add the nutmeg, paprika, garlic powder and nutritional yeast and stir well

    4. Step 4

      Once combined, add the vegan cheese and mix until melted. Stir through chopped parsley and salt & pepper to taste

    5. Step 5

      Drain pasta once soft and add to the sauce, stirring thoroughly

    6. Step 6

      Spread Nuttelex on the outer sides of the bread. Add 2 tbsp of the mac & cheese mixture onto one slice of bread, on the non-buttered side, then top with the other slice

    7. Step 7

      Fry the sandwich for approx 2 minutes until golden, then flip and fry for another 2 minutes on the other side, pressing it down with a spatula
