Smokey Beans with Thyme and fried Chorizo Breakfast Topper

Smokey Beans with Thyme

4 Slices Chia Omega-3 Wholemeal Loaf
400g can cannellini beans
400g can tinned crushed tomatoes
1 brown onion, diced
1 clove of garlic, crushed
3 sprigs of thyme
Salt and pepper to taste
2 tsp olive oil

 

Fried Chorizo Crumble

1 chorizo
1 tsp olive oil

Method

    1. Step 1

      Saute off diced onions in the olive oil until translucent. Add garlic and cook for another minute.

    2. Step 2

      Add tomatoes and thyme and cook for 20 mins

    3. Step 3

      Add beans cook for a further 5 mins.

    4. Step 4

      Season with salt and pepper.
