Smoked Salmon & Cream Cheese Sandwich

4 slices Bakers Delight Hi-Fibre Lo-GI Loaf
2 tb light spreadable cream cheese
100g smoked salmon or hot smoked salmon
8 slices cucumber (optional)
Handful baby spinach leaves


    1. Step 1

      Spread all four slices of bread with the cream cheese

    2. Step 2

      Layer the salmon onto the two bottom slices (flake it if using hot smoked salmon), followed by the cucumber slices (if using) and finally the lettuce. Putting the cucumber in the middle helps to stop the sandwich going soggy by lunchtime

    3. Step 3

      Finish with the top slice of bread and press down lightly. Wrap or place in a reusable sandwich container
