700ml high quality vanilla ice cream, softened slightly
6 x Bakers Delight Lemon Tarts (crushed)
Crush lemon tarts into pieces.
In a large mixing bowl, combine the ice cream and crushed tarts. Fold the tarts through the ice cream. Place into freezer for 1-2 hours or until frozen.
To serve, scoop ice cream into bowls and garnish with blueberries and lemon rind.
TIP: Dip Ice-Cream Scoop in hot water before scooping.
