Salmon & Cheese Hi-Fibre Lo-GI Roll

For summer adventures in the park or at the beach, our salmon patty Hi-Fibre Lo-GI Roll recipe is fresh and healthy to keep you going all day long!



2 Bakers Delight Hi-Fibre Lo-GI Round Rolls
½ Avocado
2 lettuce leaves
2 slices cheddar cheese
1 tb tomato relish (or reduced sugar tomato sauce)
½ cup grated carrot
2 small cans salmon (90g can)
½ small bunch chopped parsley
1 spring onions, sliced
Squeeze of lemon juice
Pinch of pepper
1 egg
Olive oil for cooking


    1. Step 1

      Combine the salmon, spring onion, parsley, lemon juice, egg and pepper into a food processor. Shape into 2 burgers. Cook the burgers in a pan over a low – medium heat with olive oil until cooked through

    2. Step 2

      Cut the roll in half, without quite going all the way through so the halves are still attached

    3. Step 3

      Slice the avocado and divide between the rolls. Layer each with the lettuce and carrot, followed by the salmon burger and a slice of cheese

    4. Step 4

      Spread the top half of the roll with the tomato relish and close. Now it’s ready to wrap or place in a reusable container
