Roast Lamb, Greek Salad & Tzatziki Roll

2 Bakers Delight Cape Seed Rolls
40g feta cheese
4 slices roast lamb (finely sliced is best)
1/4 cucumber, deseeded & finely sliced
1 tomato, deseeded & finely sliced
Handful of shredded lettuce
4 sliced Kalamata olives (optional – if the kids hate them leave them out!)
1 tb tzatziki

*Be sure to deseed your tomato and cucumber to stop the roll going soggy

Method

    1. Step 1

      In a bowl combine the tuna, mayo and beans. Mix to combine well

    2. Step 2

      Cut the roll in half, without quite going all the way through so the halves are still attached

    3. Step 3

      Divide the tuna mixture between the rolls and top with the leaves. Close the rolls and wrap or pop into reusable containers
