Rhubarb, Apple & Raspberry Cobbler

Our Raspberry & Coconut Scone Cobbler is perfect for those cold and rainy winter days. Add a scoop of ice cream before serving to take it to the next level!

4 Bakers Delight Raspberry & Coconut Scones
330gm (3 cups) rhubarb, cut into 2cm pieces
5 Granny Smith apples, peeled, cored and roughly chopped
1 tbs vanilla bean paste
1 tbs honey
1/2 cup caster sugar
2 tbs cornflour
1 lime, juiced
1 orange zested and juiced
2 tsp orange marmalade
2 tbs shaved coconut, toasted
Vanilla ice cream, to serve

Method

    1. Step 1

      Place rhubarb, apples, vanilla bean paste, honey, caster sugar, cornflour, lime juice, orange juice and zest into a bowl. Using a wooden spoon, stir well to incorporate all ingredients

    2. Step 2

      Transfer into a round 25cm baking dish. Nestle each scone into the mixture. Bake for 35-40 minutes or until fruit is tender

    3. Step 3

      Place orange marmalade in a microwave-safe bowl and heat for 10 seconds

    4. Step 4

      Remove cobbler from oven, brush each scone with orange marmalade and sprinkle with toasted coconut. Serve with ice cream
