Pulled Pork & Pineapple Salsa Sandwich

Ingredients

Ingredients

4 slices Bakers Delight Cape Seed Loaf
½ avocado, mashed
½ cup pulled pork
½ cup pineapple salsa

Salsa

1/2 pineapple, diced small
1 long red chilli, seeds removed (optional – these chillies are not too hot)
Handful fresh mint, leaves picked and chopped
1 small red onion, finely diced
Juice of 1 lime

*This will make more than you need, but will keep in the fridge for a about a week

Method

    1. Step 1

      Combine all the ingredients and store in a sealed container in the fridge

    2. Step 2

      Spread two slices of the bread with the mashed avocado

    3. Step 3

      Top with the pulled pork and the pineapple salsa and top with the second slice of bread

    4. Step 4

      Cut into halves or quarters and wrap or pop into reusable sandwich container
