Poached Chicken, Avo & Cream Cheese Sandwich

1 chicken breast (this will be more than you need for 2 sandwiches)
½ avocado
Squeeze of lemon juice
Black pepper
1 tb light spreadable cream cheese
2 lettuce leaves


    1. Step 1

      The night before bring a small saucepan of water or stock to boil. If you like you can add a couple of bay leaves or a sprig of thyme or other herbs to the pan. Add the chicken and bring back to the boil. Reduce the heat to a simmer and cook for about 15 minutes. Turn off the heat and let the chicken sit in the hot liquid for another 5-10 minutes. Remove the chicken and allow to cool before slicing and storing in a container in the fridge. The cooked chicken will keep for 3-4 days

    2. Step 2

      Mash the avocado with the lemon juice and black pepper. Spread over two slices of the bread. Spread the cream cheese over the other two slices of bread

    3. Step 3

      Layer the chicken over the avocado, followed by the lettuce and top with the cream cheese spread bread slices. Cut into halves or quarters and wrap or pop into reusable sandwich container
