4 slices Bakers Delight Chia Omega-3 Wholemeal Loaf
1 tb pesto 
4 slices cold frittata

Method

      Frittata is a brilliant way of getting some veggies into the kids and makes a lovely mid-week dinner. Be sure to cook your veggies first before adding to the egg mixture as raw veggies release too much water and take longer to cook than the eggs

    2. Step 2

      Roast or pan-fry them in a little extra virgin olive oil first. Make a big one so that you have plenty of leftovers for your own lunch and it makes a brilliant sandwich filling! I’ve added a little pesto for extra flavour, but if the kids like it plain or with a little tomato relish or cream cheese that works too.

  2. Sandwich

      Lay out the bread slices and spread with the pesto

    2. Step 2

      Divide the frittata between two bread slices and top with the remaining bread

    3. Step 3

      Cut into halves or quarters and wrap or pop into reusable sandwich container
