Egg Salad Sandwich

4 slices Bakers Delight Hi-Fibre Lo-GI Loaf
3 hard boiled eggs, peeled and roughly chopped
1 green onion, finely sliced
Handful of basil, finely chopped
1 tb olive oil mayonnaise
½ tsp Dijon mustard
Pinch iodised salt
Grind of black pepper
Handful alfalfa or snow pea sprouts (if your kids don’t like these you can use lettuce instead)

Method

    1. Step 1

      In a small bowl combine the egg, green onion, basil, mayo, mustard, salt and pepper. Mix to combine

    2. Step 2

      Divide the mixture between two slices of bread, top with the sprouts and then the second slice of bread. Cut into halves or quarters and wrap or place in a reusable sandwich box
