Cottage Cheese, Tomato & Cucumber Toast

2 slices of Bakers Delight LowFOD Loaf
4 tbsp cottage cheese
8 cherry tomatoes chopped
2 qukes (baby cucumbers) chopped
¼ cup of alfalfa
1 lime, juiced
Salt and pepper


    1. Step 1

      Toast the slices of bread

    2. Step 2

      Spread with cottage cheese

    3. Step 3

      Top with the tomato and cucumber

    4. Step 4

      Season with salt, pepper and lime juice

    5. Step 5

      Sprinkle over the alfalfa
