Method
Preheat oven to 180 °C. Slice the breadstick into 12 even crostini and place them on a baking tray. Spray or drizzle with olive oil and bake for 10 minutes, until golden and crisp
Meanwhile, combine diced tomato, red onion, basil, salt, pepper, and lemon juice in a bowl to make your bruschetta topping. Set aside
Use a small ghost-shaped cookie cutter to cut 12 mozzarella ghosts from the cheese slices
Remove crostini from the oven. Spoon bruschetta mix on top of each one
Lay a mozzarella ghost over each crostini, then use tiny dots of balsamic glaze to create the eyes and mouth
Serve immediately with extra lemon wedges and the remaining balsamic glaze on the side for dipping
Tip: If you want the ghosts slightly melted and gooey, pop the topped crostini back into the warm oven (turned off) for 1–2 minutes before adding the “faces”
